Want a quick and easy dessert that will still impress if you have company? I just made one tonight. It’s not really got a name, but it’s only 3 simple ingredients. We can call it Summer Cream Pudding. ☀️
1 box pudding mix instant kind or cook and serve. (I used the sugar free cook and serve kind.)
1 1/2-2 cups Greek Yogurt (I used a coconut Greek yogurt)
3/4 a small cartoon of heavy whipping cream (I used the dairy free silk version)
Start by combining the yogurt and the pudding mix with a spoon or spatula till all combined. Refrigerate 30min or longer. You just want it cold.
Once the mix is cold. Whip the cream until you get stiff peaks.
Gently fold in a little of the cream and then the rest. Folding a little in before keeps the mix from deflating when you add the rest.
This will create a creamy mixture not as firm as pudding, but more like the pudding before you put it in the fridge to firm up. It will be lighter and fluffier.
Then serve with berries, more whip cream, chocolate, crumbled cookies, crushed candy bars, or whatever you fancy that will go with your flavor.
I made mine so it’s dairy and sugar free and healthier with the coconut yogurt. I wanted a light, cool, and healthy dessert on this very hot day. This hit the spot. It was creamy and the coconut yogurt made the vanilla pudding taste almost lemony 🍋.
My hubby who isn’t normally a fan of dairy or sugar free things asked for seconds, if that says anything.
The measurements don’t need to be exact, it will still come out good, but I wouldn’t add any more Greek yogurt because it will cause it not to be able to firm up as much.
