Weekend words…

Coleus

This weekend has been a busy one as predicted. During my cleaning this morning for the elderly couple I got a bushel of apples and a bag of pears from their trees. So my next project is canning applesauce, pears, and making jelly from the grapes I peeled and got the seeds out of the other day. I get so excited to try something new with canning (I know I am weird). My venture into canning has been fun so far and I am looking forward to do more 🙂 Tomorrow I am off to church and then the 1st birthday of my friends little boy… I get to take the photos of this blessed event… he is a cutie 🙂

Peach Shortcakes (gluten-free)

For 4th of July I tried something new… Since I am gluten -free I am always looking for ways to turn deserts gluten-free. Since strawberry shortcakes and peach cobbler are popular on holidays I combined them to make peach shortcakes. I had peaches and had found gluten- free Bisquick mix.

This was an easy thing to do… so I cut up the peaches and mixed them with a little Splenda (you can use sugar or your favorite sweetener). I chilled the peaches mixture for the afternoon. Before dinner I mixed up the shortcakes recipe off the Bisquick box (I only made 1/2 the recipe and it still gave me 5 shortcakes).

When I served dinner I plopped the piles on a baking sheet for the shortcakes as directed and baked them while we ate. When we were done I had taken the shortcakes out and they were cool enough so I cut them in half, put on some homemade whip cream, added the peaches, put on the shortcake top, and topped with the homemade whip cream and cinnamon. They were yummy and delicious.

Hubby and my Dad even said they did not taste gluten-free. To make the whip cream I combined heavy whipping cream and Splenda and whipped it with my hand mixer till stiff peaks formed. Now that I know this recipe will work I am anxious to try it with other fruit like blueberries, nectarines, and even maybe apples (would want to cook the apples first).

And the sun came out…

Yesterday was a terrible, horrible, no good, very bad day… it is why I missed my 10 things Tuesday and will have to make up for it with ten things Thursday.

Today I am choosing to see the sunshine and white fluffy clouds…

I am also choosing to rest and try to de-stress. It’s so humid outside you are drenched as soon as you go out. The dogs keep trying to leave the fence to get to the cool ditch water, but even that is dried up so I put out their baby pool (Chase liked it, Baxter only would drink from it).

 

 

 

 

 

Still they choose to be inside with me sleeping on the cold wood floors. (Can’t say I blame them). We got my car back from the shop today 🙂 Yahoo no more rental. I want to try to remember to post Monday nights dinner I made… cauliflower soup. I took some to work to share with coworkers and it got great reviews. I made the soup Monday as it was still chilly and cold enough for soup… unlike today.

Driving on the back road earlier in the week, near where we saw the peacock, we saw some chickens running around. Chickens are so funny when they run, if you are in a bad mood and see a chicken run, you can’t help but feel better, at least a little bit.

 

 

 

 

 

 

When I went out to check on the chickens and eggs I saw our cherry tree has started to get some red cherries on them. These are sour cherries, but are still good. I will have to keep an eye on them to see when they get ready and try to beat the birds to them.

 

 

 

 

 

 

I am glad half the week is over and there is only two days till the weekend.
