Kindness from others….

So this past week I was nominated for two new awards… I have been slow in accepting as things have gotten away from me. Yet through showing kindness to other this week it has been shown back to me 🙂

I would like to thank The Meandering Matriarch~ AKA:  Suellen Carey-Clarke for nominating me for the Very Inspiring Blogger Award. I have received this one once before, but wanted to mention it again as this as I do not like to ignore a nomination and feel blessed to be nominated again. 🙂

Sadness in the week of kindness…

So this week was supposed to be about kindness and what we can do to show kindness…. But tonight I am full of sadness after the Sandy Hook Elementary School in Newtown, CT shooting. My mind is spinning once again and I am moved to tears after hearing all of those little kids and teachers who lost their lives at the hands of a young 20 year-old person who for an unknown reason took other’s lives in his own hands and felt he had the right to do what he did. I feel sad for the families who lost their child or children. After going through all we have and not being blessed with a child yet, I can not imagine loosing my child… thinking of it makes me cry more. If you know anyone affected by this you are in my prayers and so are the families of those 600-some kids and the staff of that school.

Still as I watch the news and all the special reports on this tragedy… I see kindness in the way people support each other, the way the first responders act/speak/lead… God bless.

Cooking Kindness…

Today I took some cookies to work and saw how happy it made those I served them to. It put a smile on people’s faces even if they didn’t want a cookie they were happy to be included in the offer. When I got home and was making dinner hubby asked for some cupcakes…

So I made some gluten-free chocolate cupcakes for hubby… normal size…Big Cupcakes

 

Then I made some extra mini cupcakes to take to work tomorrow… Small cupcakesThe recipe I used is from one of my Grandmother’s church cookbook that they put together every once in a while with all the ladies recipes. Needless to say the recipe was not originally gluten-free but I made it that way.

Hubby’s Favorite Chocolate Cupcakes

3/4 cups shortening

2 eggs (from your own chickens is best 😉 )

2 cups sugar

1 1/2 tsp vanilla

2 tsp baking soda

1 tsp baking powder

1/2 tsp xanthum gum (only if you use gluten-free flour that doesn’t have it in it. If you don’t use gluten-free flour you don’t need this.)

1/2 cup coco powder

1 cup white rice flour

1 1/2 cups brown rice flour

1/4 tsp sea salt

1 cup boiling water

To make:

Combine shortening, eggs, and sugar until well mixed.

Add milk, vanilla, baking soda, baking powder, salt,  and xanthum gum. Mix well.

Add coco and flour. Stir until combined.

Add in boiling water slowly combining as you go.

Bake at 350* for 30 minutes for big cupcakes and 20-25 for mini ones until toothpick comes out clean from center of cupcake.

Cool and ice with your favorite icing. gf cooking 001

Other ideas: I thought adding a little cinnamon, nutmeg, or ginger would be nice about 1/2 tsp at most. Also insted of the 1 cup boiling water use 1/2 cup boiling water and 1/2 cup hot coffee.

Kindness helps a bad mood…

So kindness is really in the small things and in the small ways we show God to others. Today when hubby and I went to get our blood work done the receptionist was in a bad mood….

She was overwhelmed with the computers being slow, fax down, and patients coming in. I made it my goal to show her kindness and make her smile. So I was as polite as I could be, patient, and complemented her outfit and efficiency despite the issues she was facing. By the time we left she was busier than ever, but smiling 🙂 It felt good to make her feel better and not need anything in return. I like to do things and not get or need anything in return outside of the knowledge I showed God’s love to someone 🙂 Happy Monday 🙂

Kindness at Christmas…

Week two of our Christmas countdown… this weeks value/feeling is kindness 🙂

Kindness by definition  is the act or the state of being kind, being marked by good and charitable behavior, pleasant disposition, and concern for others. It is known as a virtue, and recognized as a value in many cultures and religions (per Wikipedia). Some of my favorite synonyms for this that I found are affection, charity, gentleness, good intention, grace, hospitality, patience, tenderness, thoughtfulness, tolerance, and understanding.

I think the ultimate example of this is through the birth of Jesus…Manger

What kindness, compassion, grace, tenderness, and understanding came through that night. How can we compete… but we can do our best to be kind, charitable, gentle, hospitable, patient, thoughtful, and understanding. I am going to do my best this week to focus on living this virtue… we will see how I do. 😉

Long Cool Drink of Water

The chickens and dogs continue to enjoy the kiddy pool for water and an occassinal dip of the paws or foot. Chase especially loves the pool. He and the chickens meet around it every morning for a long cool drink of water as we try to change it out every other day to provide clean cool water for them. Having something to get up for in the morning besides work is rewarding and makes it easier to get moving. Happiness really comes for doing for other’s… people and animals alike 🙂
